I like to make a stock and live off of it , adding some fresh veg or fruit and some rice or pasta. I'm looking for some new ideas and recipies. I'd be happy to share recipies for the things I list.
Here's what's in mine:

Homemade convenience foods: chinese pork meatballs, mini meatloaves made in muffin tins, breaded zucchini rounds, breaded chicken cutlets, roasted acorn squash soup, potato croquettes, pinapple upside down cupcakes made with Namaste vanilla cake mix, carrtot cupcakes made with Namaste spice cake mix, pancakes, choc. fudgecakes

Various frozen veg and Various frozen potatoes, Ore-Ida, Alexia

We just stocked up on pre-made products:
Allergy Free Brand chicken nuggets, Deliciously Free potpies, Sunshine Burgers, Funster Natural Foods ABC Mashed Potato Letters, Weshire Farms sausage patties, Van's Buckwheat Berry Waffles

chicken broth in small containers, holiday ham for rice dishes and breakfast

I usually have corn tortillas.

I keep a lot of the same things you do.

I have the Ore-Ida potatoes - French fries, country potatoes and potato O’brians.

I use the country potatoes for so many things. You can boil and mash them, or I use them to add to soups and casseroles, and sometimes fried.

I make a lot of homemade soups and beans. I find that potatoes don't freeze well in the soups, so I add those as we use the soup.

I buy the large bags of mixed veggies and then divide that into smaller portions to add to soups and stews.

Soups: Veggie beef
Senate Bean soup
Split pea with ham or bacon
Pinto Beans
Chicken soup - keep the base frozen then add pasta or rice when serving it.
French onion soup
Lima bean soup with Italian sausage
Chili

Lasagna - this freezes so well. I make a large pan and then divide the leftovers into individual portions and freeze.

Chicken breast - uncooked and cooked
Chicken pieces - uncooked and cooked
Ham - sliced into smaller portions and frozen for sandwiches and chef salads. The bone is saved for soup.
Roast Beef - cooked and sliced
Turkey - cooked and sliced for sandwiches. I freeze in several smaller bags.
Pork chops - I repack these into packages of 2 and freeze. They thaw quickly or can cook from frozen pretty quickly and easily.
Salmon steaks - same as with pork - easy to cook from the freezer, or thaws quickly.
Frozen onions and peppers to add zip to any meal easily and quickly.
Sausage - some cooked and some uncooked
Pepperoni - for pizzas
Cheese - all different kinds - some for pizza, some for enchiladas, etc.
Angus beef hamburger patties - easy to cook from frozen
Buttermilk for cooking
Chicken and turkey broth
Twice baked potatoes - homemade or storebought

I always keep a whole frozen chicken and cook one a week for a meal and then use the rest of it for soups or sandwiches. I cook it with onions and either rice or potatoes for an easy meal.

Various breads, rolls, tortillas, and cornbread almost all homemade. Pamela's chocolate cake made into cupcakes. Homemade pizza crust, and homemade cookie dough. Trader joe's frozen pancakes (a friend sends these to me as we don't have trader Joes here).

My husband likes to smoke meats, so he always smokes extra and we have sliced brisket, ribs, and pork roast sliced and frozen.

Neither one of us really likes to cook, but we both like to eat, lol. So when we do cook we cook a lot and freeze it. Sometimes I will make 3 different soups at the same time, since they all require chopped onions, celery and carrots. It is just easier for me to do it all at once and then freeze for later.

I have a foodsaver and use it for everything. I also have a food slicer that I love it works for bread, veggies, and meats. I mark the date on everything with a sharpie.

I can have a full meal on the table in 30 - 40 minutes or less on any given night.

I like your idea of the meat loaf, I hadn't thought of that. The Chinese meatballs sound interesting, too, what do you serve those with? I plan to experiment with chicken potpies, but have not done that yet, where do you buy yours?

I was reading your list! Can you give me a link to the Allergy Free Chicken Nuggets? I can't find the link. Also the deliciously chicken pot pies, is that the brand name ? Can't find a site for pot pies either. Please help me!!! I'm lost........

Deliciously Free is the brand name. It's a new regional family business. They used to have a website that they were working on but I couldn't find it. I buy them at a heathfood store called Rainbow Blossom.

The meatballs have a sweet and sour type sauce and I serve them with steamed rice and simple veg. like broccoli. If I'm having company I might add chinese chicken salad. I send the meatballs and meatloaf for school lunches as well as for quick meals at home.

Mamaw, Our girl Missy is just the opposite. We call her our princess. All she does is look cute and sleep!

I'm mostly cooking for one so I make up a bunch of my proteins ahead (and the sides that can be frozen) and then freeze everything in single serving sizes.

In my freezer I have:

Cooked

Brown rice
Anasazi beans

Chicken breasts with a variety of seasonings/flavors (i.e. lemon rosemary or cilantro lime)
Beef roast
Brisket
Hamburger patties (beef and turkey)
Meatballs (beef and turkey)
Turkey tenderloins
Browned ground turkey for Italian dishes (seasoned with italian seasonings)
Browned ground turkey for Mexican dishes (seasoned with cumin, garlic, chili powder)

Then I have uncooked proteins and a few other staples like:

Rice tortillas
Turkey hot dogs
Frozen peas


Meal prep is pretty easy when you have these things already cooked, frozen, and ready to go. I just thaw and heat a protein serving, steam or roast a fresh veggie, bake a starch side like a potato or winter squash, and throw together a salad.

With my ground cooked meat I throw the Italian seasoned version into bottled marinara sauce which makes a yummy meat sauce to serve with Tinkayada fettucini.

The Mexican seasoned version I use for taco salads, burritos, tacos, etc.

Soups are super easy, I add a cooked protein to chicken broth, chop or grate fresh vegetables like carrots, onions, zuchini, etc, throw in some cooked brown rice....in about 20-30 minutes you have made the best homemeade soup!

one thing i do is freeze extra broth (from the can, or homemade). made hamburger soup last night with extra beef broth that i had in the freezer. just pour it into an ice cube tray and freeze. once solid, i usually dump the cubes into a ziploc smile.gif also very helpful for making gravies.
