Well, I tried the Gluten Free Pantry French Bread and Pizza Dough mix tonight. I don't know if it's because I'm at a high elevation or what, but it was so gooey and sticky that I couldn't roll it, or even shape it into a pizza type crust. I ended up spreading it out into a shallow casserole dish and then slicing it in half after baking to make a thinner french bread pizza. But, it didn't taste like a pizza dough. The texture and density was more like a biscuit and we plan to use it for that in the future. Now, I'm looking for a good recipe that acts more like a real pizza dough should. I'm even considering doing a flat bread. Does anyone have a good one out there??? I think baking has been the most frustrating thing about this for me as I used to make all our breads, and pizza doughs. I don't know if I'm just messing them all up now or if it's the lack of gluten that makes things so odd. I appreciate any help!!!
