My son's school published a cookbook with recipes submitted by the parents. I was happy to see quite a few that are simple with natural ingredients. We had this for dinner tonight and it was good. I used Trader Joe's Wild and Basmati blend with dried veg.

Chicken Breasts with Wild Rice

1/3c. orange juice
1/3c. raisins
3 whole chicken breasts, cut in half lengthwise
3 Tb. butter or marg.
14 oz. chicken broth
2 Tb. sliced green onion
1/3c. wild rice, rinsed
2/3 c. long grain rice
2 c. sm broccoli florets or frozen peas
3 oz. can sliced mushrooms(TJ's blend includes this but I added some dried shitake)
2 Tb. snipped parsley(TJ's blend includes this)
1 tsp. orange peel

Combine OJ and raisins, set aside.
In skillet, brown chicken in butter. Sprinkle with salt and pepper. Remove chicken and set aside. Stir in broth, onion and orange peel, bring to a boil. Stir in uncooked wild rice and return to a boil. *Return chicken to pan. Reduce heat, cover and simmer 25 min. Stir in uncooked long-grain rice and raisin mixture. Cover and simmer 20 min. more. Stir in remaining ingredients. Cover. Cook 10 min. more or until broccoli is tender. Serves 6

*At this point, if using TJ's blend just add all ingredients except broccoli and cover, loer heat and simmer 14 min. or 'till rice is tender and liquid is absorbed. Add broccoil in the last few minutes, just to warm.
